What We Taste: Plum Pear Orange Lime
Kathare is a small three hectare farm owned by husband and wife Richard Kiama and Beatrice Muthoni Murithi, sitting at 1,600 Masl at the foot of the now extinct Mt Kenya volcano. Richard and Beatrice have owned and managed their property since 2006, where they grow predominantly SL-28 with a small amount of Ruiru 11 in nutrient rich soil, balanced with a cool high altitude climate. In 2016 they invested in the building of a small wet mill on their property, enabling them to process and dry their coffee on site, rather than selling the whole cherry to a nearby co-operative for processing.
The coffee is hand picked and mechanically pulped to remove the skin and fruit from the inner parchment. It was then dry fermented for between 12 and 24 hours to break down sugars and remove the mucilage. Finally the parchment covered coffee is washed and graded in channels, before being moved to raised drying tables, where it is dried for up to three weeks. Lastly the dried parchment was transported to the Embu County dry mill to be prepared for shipping.
The Kenya Kathare Estate presents a bright and juicy cup of stonefruit with a pleasing acidity, flavour notes of pears and plum with an orange and lime finish.
