Tastes Like: Red Currants Nectarine Candied Fruit
The farm of Lucila Hernandez is in the village of Las Flores, in the Santa Barbara Municipality, and she dedicates her work to producing exceptional coffee. Her focus on coffee began when she inherited the family farm along with her husband Juan, and their son has also become involved as he grew older. They all activity work on the family farm and this is the first season of preparing micro lots for specialty coffee production.
This coffee is hand picked and the cherries de-pulped on the day of harvest, followed by a dry fermentation process which lasts for 18-24 hours in sealed tanks. The parchment is then rinsed multiple times before being transferred to a parabolic solar dryer. Over the following eight to fourteen days the coffee parchment is carefully hand sorted to remove any potential defects.
This coffee is well balanced, with a sweet candied fruit aroma and flavours of red currants and nectarine, and a delightful buttery cream finish.
