What We Taste: Orange Mandarin Peach Apricot
The Refisa Washing Station sits in the Nensebo Region of Ethiopia, within the West Arsi Zone at 1800 to 1970 metres above sea level, an area blessed by rich and fertile soils.
Each coffee cherry is hand picked and hand sorted, and then pulped and pre-graded before a wet fermentation period of 48 hours. The cherry is washed and graded in water filled channels, and carefully separated based on their density. Once this is completed, they are then soaked in fresh water for an additional period, before drying commences. During the drying phase the coffee is carefully layed in 2cm high sections, drying naturally in the sun for ten days.
The Ethiopia West Arsi Refisa exhibits bright orange, mandarin, peach and apricot notes, with a lingering lemon-like acidity. The finish is a sweet caramel and hints of coffee blossom.
