What We Taste: Jammy Passion Fruit Lemon Dark Chocolate
Producer Jose Omar Lemus Finca San Francisco sits on two hectares in the Chalatenango region of northern El Salvador, known for its cool climate. Historically it was a lesser known region for specialty coffee, but that changed in 2007 when a pacamara won the Cup of Excellence award. Since that time the area's reputation has continued to grow, particularly its exceptional microlots.
Jose has a quality focus, rather than increasing total production he replaces aging trees to gradually increase the overall cup quality of each harvest. All of his coffees are dried on raised 'African' drying beds.
All of this effort results in a heavy and intensely boozy coffee of jammy passion fruit and lemons, mild dark chocolate flavours and a lingering sweetness.
Available for either espresso or filter coffee brewing.
