Costa Rica La Chumeca

Having spent their lives working with coffee, the Urena Jimenez family established their Chumeca farm in 2015 in San Pablo de Leon Cortes as a means of producing and exporting amazing coffees.  They are dedicated to producing naturally processed coffees, and in 2018 they began experimenting with anaerobic processing.

 

For the preparation of this coffee, a series of stainless steel tanks were employed, similar to those used in the production of wine.  The whole coffee cherry was loaded into these tanks, and the tanks sealed tight.  At the top of the tanks is a valve for gases to escape, while the lower section of the tanks enable the extraction of liquid so that pH can be measured, along with temperature and sugar concentration.  The maceration that occurs during this process causes the sugars in the coffee fruit to penetrate into the coffee seed.  Once this part of the process is completed, the coffee is removed from the tanks and dried on raised beds for 21 days.

 

The Costa Rica Chumeca is a deep, boozy cup of stewed fruits, cranberry, strawberry and oranges, a silky mouthfeel and a delightful brown sugar finish. 

 

Available for either espresso or filter coffee brewing.
